Our Medium Desiccated Coconut is grated into medium-thick shreds. This gives is a slightly denser, more noticeable texture than the thinner Fancy Shredded Coconuts. It is also more thoroughly dried giving it a slightly crisper texture than the more familiar Fancy Shreds, too.
