It is simply the raw, dried cumin seeds ground to a fine powder. Roasted cumin powder is made by slow roasting the seeds prior to grinding until their essential oils release, giving off their unique smokey, savory aroma. It has a more potent, sweet-smoky flavor as compared to cumin seeds.
